Summary:The objective of this project is to optimize a product design, study case: Pinot Noir (Vitis vinifera) wine production. The aim is to create a decision-making tool for optimum design of Pinot Noir wine based on variations in pH, residual sugar content, turbidity, alcohol volume fraction, amount of vanillin, tannin concentration and hue, through changes in the production and conservation process in barrels, seeking to maximize profits. A mathematical model that integrates different process variables and economic variables relating to the price and product demand is constructed. A MINLP optimization is performed on GAMS with the global search solver SCIP. Finally, an analysis of scenarios is performed in which the effect of changes in the level of sales of the product in the market and in the price of the product offered by the competition is evaluated.
