Determinación del tiempo de crecimiento para cosecha y comportamiento fisiológico poscosecha del banano variedad Gross Michael

La investigación se realizó en la finca “El Manantial”, en la vereda de la Cuchilla del Salado, municipio de Manizales; se escogieron cinco lotes de la finca, cuatro racimos por lote, una gaja por racimo, y de cada gaja se eligieron tres frutos. En el objetivo general se determinó el tiempo de crecimiento del banano variedad “Gross Michael”, con base al desarrollo físico del fruto que establezca el tiempo mínimo de cosecha, y analizar el comportamiento poscosecha a temperaturas de 18° y 28°C. Para los objetivo específicos se determinaron los parámetros físicos de crecimiento precosecha, que indican el máximo crecimiento del fruto, se realizaron mediciones periódicas, cada 15 días, en los frutos centrales de la segunda gaja, de tres diámetros de las aristas principales, en el punto medio de su longitud, perímetro central, y longitud exterior del fruto, desde el punto floral hasta el punto inicial de pedicelo en la corona. Se elaboró una tabla de colores en diferentes tonalidades de verde, y se complementó con la experiencia del productor, en aspectos como número de hojas que han crecido en el tallo fruta, y el estado del residuo floral adherida a cada fruta. En lo referente a peso, relación peso de manos / vástago, número de manos, número de frutos y maduración del racimo, en el momento de cosecha. Se estableció el proceso de maduración del racimo de banano variedad “Gross Michael”, mediante la variación de los parámetros de: cambio de coloración verde a amarillo, así como su comportamiento fisiológico poscosecha en almacenamiento a temperaturas de 18° y 28°C. En la determinación del proceso de maduración del racimo se analizó mediante el comportamiento fisiológico durante la etapa de poscosecha, por la determinación de las curvas de manejo respiratorio acompañadas de los cambios físicos (firmeza y cambios de color verde a amarillo) y químicos del producto (pH, °Brix, acidez); temperatura a 18°C almacenamiento y a 28°C mercadeo. / Abstract: The investigation was carried out in the property "El Manantial," in the sidewalk of the kitchen knife of the Salted, municipality of Manizales; five lots of the property were chosen, four clusters for lot, a hand for cluster, and of each hand three fruits were elected. In the general objective the time of growth of the banana tree was determined variety "Gross Michael," with base to the physical development of the fruit that establishes the minimal time of crop, and analyze the behavior post-harvest to temperatures of 18° and 28°C. For the specific objective the physical parameters of growth were determined pre-harvest, that indicates the maximal growth of the fruit, they were carried out periodic mensurations, every 15 days, in the central fruits of the second hand, of three diameters of the principal lines, in the half point of their longitude, central perimeter, and external longitude of the fruit, from the floral point until the initial point of pedicelo in the crown. A board of colors in several tones of green colors was elaborated, and it was supplemented with the experience of the producer, in looks like number of leave that have grown fruit in the shaft, and the state of the floral residual adhered to each fruit. In the with respect to weigh, relationship weighs of hands/ offspring, number of hands, number of fruits and maturation of the cluster, in the moment of crop. It settled down the process of maturation of the cluster of banana tree variety "Gross Michael," by means of the variation of the parameters of: change of green [coloration] to yellow, as well as their behavior physiologic post-harvest in storage to temperatures of 18° and 28°C. It in the determination of the process of maturation of the cluster was analyzed by means of the physiologic behavior during the stage of pos-harvest, for the determination of the curves of respiratory accompanied handling of the physical change (stability and change of green color to yellow) and chemicals of the product ([pH], °Brix, acidity); temperature to 18°C storage and to 28°C marketing.
