Eighty two varieties of the Colombian Central Collection of Solanum tuberosum subsp. tuberosum were used for determining variables related with its processing capacity in the food industry. Making use ofthe correlation analysis and multivariate statistics (Principal components and cluster analysis) potato accessions were identified because of their high capacity of being used as progenitors in obtaining genotypes with desirable traits for the fried potato industry.Debido a la gran variabilidad existente en Colombia de la especie Solanum tuberosum L., es indispensable realizar procesos de mejoramiento genético para no desaprovechar este gran recurso. De la Colección Central Colombiana de Solanum tuberosum subsp. tuberosum se tomaron 82 variedades, con el fin de determinar en ellas diversas variables relacionadas con su capacidad para procesamiento en la industria de pasabocas.
