Annually are discarded around 1300 million of tonnes of food wastes worldwide. The improper management of this generates environmental impact due to greenhouse gas emissions formation and leachate managers vectors. The anaerobic digestion comes up as an alternative for processing and energy use of this. However rapidly biodegradable nature of the residue
becomes essential to an assessment of its operation a continuous mode. The performance and the stability in star-up time
operation and recovery in a laboratory-scale agitated tank reactor for anaerobic digestion of restaurant food wastes was evaluated. In the star-up
the reactor operated with Inoculum/substrate ratio of 2 in solids volatiles terms
getting a daily yield of 0
0807 m3 de Biogas/Kg SV·day and SV reduction of 63
08 % approximately. In the operation organic loading rates (OLR) 1 and 5 were evaluated. Performance and good stability was obtain in a low OLR
while high OLR the system was inhibited for VFAs accumulation. The recovery strategies applied succeeded
decreasing VFAs concentration and reactivating metabolic activity in the reactor. Finally
OLR intermediate 3 also evaluated
this was stable during the first days and after that became unstable and acidified.
