Los Disruptores Endocrinos (DE) son sustancias consideradas como alteradores de la homeostasis del organismo animal, vegetal y humano, sus orígenes pueden darse de forma natural del cuerpo biótico o de forma externa por contacto con algún tipo de compuesto químico, generando tanto efectos acumulativos como perjudiciales en cualquier etapa del ciclo vital. Al verse esta afectación en cualquier organismo, la cadena alimentaria puede ser considerada una de las principales vías de exposición de los DE, siendo los grandes mamíferos, grandes depredadores, y en especial los humanos quienes terminen con la mayor concentración de DE resguardado en su ser. La carne de pollo, al ser un producto de alto consumo global, y debido a los procesos industriales a los que se ve expuesto, puede contaminarse por diferentes fuentes a DE y llevarlos a los potenciales consumidores. Para ello, se realizó una revisión documental de 76 artículos científicos y 13 documentos oficiales donde se obtuvieron los siguientes resultados: Los principales DE encontrados en carne de pollo eran plastificantes (ftalatos, bisfenol A), dietilestilbestrol, bifenilos (polibromados y policlorados) con 16,7% y las principales presas donde se encontraban fueron pechuga 28.2%, vísceras 20.5% y muslo 17.9%. La industria avícola junto a las entidades nacionales e internacionales deben vigilar, normar y controlar estas sustancias toda vez que su exposición genera impactos irreversibles en la salud pública. |

Al verse esta afectación en cualquier organismo, la cadena alimentaria puede ser considerada una de las principales vías de exposición de los DE, siendo los grandes mamíferos, grandes depredadores, y en especial los humanos quienes terminen con la mayor concentración de DE resguardado en su ser. La carne de pollo, al ser un producto de alto consumo global, y debido a los procesos industriales a los que se ve expuesto, puede contaminarse por diferentes fuentes a DE y llevarlos a los potenciales consumidores. Para ello, se realizó una revisión documental de 76 artículos científicos y 13 documentos oficiales donde se obtuvieron los siguientes resultados: Los principales DE encontrados en carne de pollo eran plastificantes (ftalatos, bisfenol A), dietilestilbestrol, bifenilos (polibromados y policlorados) con 16,7% y las principales presas donde se encontraban fueron pechuga 28.2%, vísceras 20.5% y muslo 17.9%.
