Gnathostoma spp es el agente causal de una parasitosis denominada paniculitis eosinofílica migratoria o gnatostomiasis humana, transmitida principalmente por el consumo de productos acuícolas. Esta parasitosis causa morbilidad y casos aislados de mortalidad en países asiáticos y americanos; principalmente en los lugares donde tienen la pesca como fuente de sostenimiento económico de la población. Debido a la falta de un seguimiento efectivo del cumplimiento de políticas pesqueras, se presenta un manejo inadecuado de los productos acuícolas, afectando la calidad del producto adquirido por los consumidores. El objetivo principal de este trabajo es documentar sobre la importancia de Gnathostoma spp en el consumo acuícola y sus consecuencias para la salud humana. Para cumplir con este objetivo, se ha efectuado una revisión sistemática entre el 2009 y el 2018 sobre las generalidades del parásito, especies de consumo acuícola afectadas, gnatostomiasis humana con casos clínicos y normatividad pesquera; logrando así, que la población en conjunto con productores pesqueros y autoridades sanitarias conozcan, creen e implementen normas que aseguren la calidad de estos alimentos al momento de ser consumidos. Se encontró un total de recuperar 268 documentos; después, del filtrar los documentos disponibles se consiguieron 188 artículos completos. Al añadir criterios de exclusión, se pudo obtener 164 artículos para su desarrollo, todos de gran relevancia en el trabajo. Con lo anterior se concluye que la gnatostomiasis humana es poco conocida en el ámbito medico llegando a producir manifestaciones cutáneas, viscerales, orales, oculares o incluso neurológicas, con consecuencias de morbimortalidad a nivel mundial. |

Esta parasitosis causa morbilidad y casos aislados de mortalidad en países asiáticos y americanos; principalmente en los lugares donde tienen la pesca como fuente de sostenimiento económico de la población. Debido a la falta de un seguimiento efectivo del cumplimiento de políticas pesqueras, se presenta un manejo inadecuado de los productos acuícolas, afectando la calidad del producto adquirido por los consumidores. El objetivo principal de este trabajo es documentar sobre la importancia de Gnathostoma spp en el consumo acuícola y sus consecuencias para la salud humana. Para cumplir con este objetivo, se ha efectuado una revisión sistemática entre el 2009 y el 2018 sobre las generalidades del parásito, especies de consumo acuícola afectadas, gnatostomiasis humana con casos clínicos y normatividad pesquera; logrando así, que la población en conjunto con productores pesqueros y autoridades sanitarias conozcan, creen e implementen normas que aseguren la calidad de estos alimentos al momento de ser consumidos. Se encontró un total de recuperar 268 documentos; después, del filtrar los documentos disponibles se consiguieron 188 artículos completos. Al añadir criterios de exclusión, se pudo obtener 164 artículos para su desarrollo, todos de gran relevancia en el trabajo. Con lo anterior se concluye que la gnatostomiasis humana es poco conocida en el ámbito medico llegando a producir manifestaciones cutáneas, viscerales, orales, oculares o incluso neurológicas, con consecuencias de morbimortalidad a nivel mundial.Gnathostoma spp. is the causative agent of a parasitosis called migratory eosinophilic panniculitis or human gnatostomiasis, transmitted mainly by the consumption of aquaculture products. This parasitosis causes morbidity and cases of mortality in Asian and American countries. Many of these places, as well as fishing as a source of economic support for the most vulnerable population; However, in this document an adequate management is presented, affecting the quality of the product. The main objective of this work is to document the importance of Gnathostoma spp in aquaculture consumption and its consequences for human health. In order to achieve this objective, a systematic review was carried out between 2009 and 2018 on the generalities of the parasite, aquatic consumption species, human gnathostomiasis with clinical cases and fishing regulations; thus achieving, that the population together with the producers and health authorities join, create and apply standards that ensure the quality of these foods at the time of consumption. A total of 268 documents was found; Afterwards, the complete archives got 188 complete articles. By adding the exclusion criteria, 164 articles could be obtained for its development, all of great importance in the work.
