description El artículo presenta un análisis bibliométrico del estado actual de la producción científica del consumo responsable de alimentos orgánicos desde las Ciencias Administrativas, en un lapso de tiempo del 2000 al 2020. Desde el punto de vista metodológico, se establecieron dos categorías específicas de investigación, enfocado en primer lugar a la aplicación del consumo responsable de alimentos orgánicos y en segundo lugar, al origen conceptual, sus teorías sociales y estructuras gubernamentales, de las cuales se muestra una visión general. Se realizó un análisis de 1.000 publicaciones a través de Scopus y el software estadístico R, para identificar palabras claves, autores, citas, co-citas, coocurrencias, áreas de investigación, países, afiliaciones institucionales y patrocinadores. Se evidencia un buen nivel de cooperación entre países, un crecimiento anual del 16% y un bajo número de publicaciones a nivel latinoamericano. Asimismo, se propone incentivar la investigación y publicación en consumo responsable de alimentos orgánicos en el área estudiada.

From the methodological point of view, two specific categories of research were established, focused firstly, to the application of responsible consumption of organic food and secondly, to the conceptual origin, its social theories and governmental structures, of which an overview is shown. An analysis of 1,000 publications was performed through Scopus and the R statistical software to identify keywords, authors, citations, co-citations, co-occurrences, research areas, countries, institutional affiliations and sponsors. A good level of cooperation between countries to extend the information on this field is evident, with an annual growth of 16% in the number of publications, yet a low contribution at the Latin American level.
