Summary:The results obtained by implementing chitosan films supplemented with essential oils of rosemary and oregano, at concentrations of 0.4% and 1.5% (v / v), where their performance was evaluated as antioxidants and antimicrobials against pathogenic bacteria E. coli and B. subtilis, are presented in this work. Incorporating essential oils allowed improve physical, antioxidants and antimicrobial properties of the films, being the film with rosemary oil in a concentration of 1.5% (v / v), the most promising research result. The film with rosemary oil 1.5% obtained the following results: colorimetry total color difference of 11.83 ± 1.56 was obtained, in accordance with ISO 12647-2 a total content of phenols 0.0523 mg gallic acid equivalent (AGE) / g of film, free radical capture 16.47% and percent inhibition of 11.96% and 36.29% against E. coli and B. subtilis, respectively.
