Summary:The sugar industry supports much of its income in the crystallization of sucrose that comes from the milling of sugar cane. However, this process is affected by various microorganisms, being Leuconostoc mesenteroids a major source of loss resulting from the fermentation performed on sucrose. This study aims at the inhibition of the bacterium L. mesenteroids with different concentrations of chemical salts such as CaCl2, NaClO, EDTA, NaNO2, Na2SO3 and (NH4)3PO4 in bacterial growth substrate, a work that is part of a broader research that will allow us to identify different forms of bacterial inhibition, which can be implemented in the industry.
