A marmalade production line is being proposed during this study under a sensory evaluation and microbiological analysis, in order to obtain an innocuous product and in this way, take advantages of the production which is not freshly commercialized.En el Municipio de Ciénega, Boyacá, se conformó la Asociación de  productores de uchuva del municipio (ASOPROCIEN) con cincuenta productores. El total de la producción  se envía sin seleccionar a la exportadora Andes Export Company. Esta empresa selecciona el producto y devuelve a la Asociación la uchuva que presenta  el defecto de rajado, lo cual corresponde al 20% de la producción.
