El proyecto de grado se ha realizado con el fin de describir todo aquello que no genere valor y determinar qué herramientas Lean Manufacturing ayudarán a mejorar el proceso productivo de Lactiquesos SAS. En principio el problema de investigación fue el de identificar las variables que intervienen en la proliferación de baja productividad en la organización, todo con el fin de diseñar estrategias que ayudaran a Lactiquesos S.A.S: En primera instancia reconocer focos de baja productividad, seguido de un desarrollo de mejoras mediante el uso de herramientas Lean y por último evaluar dichas mejoras a modo de retroalimentación. La metodología de trabajo es de tipo correlacional. Realizando (1) un diagnóstico mediante un análisis modal de fallos y efectos, además de la (2) aplicación de un diagnostico Lean, seguido (3) del uso de la herramienta de las 5’s, y con dichos diagnósticos obtener el estado actual de la empresa, (4) diseñar posibles estrategias para el mejoramiento del proceso productivo, generando diagramas de recorrido y de flujo del proceso, además del proponer Poka Yokes y control visual mediante Andon, determinar el flujo de valor mediante VSM y el proponer cambio rápido de herramientas SMED, todo esto con la (5) finalidad de reducir la insatisfacción de la demanda, aumentado la cantidad de dinero recibida anualmente al involucrar a todo el personal en el proyecto de mejora de la productividad. Gracias a lo anterior se pudo obtener datos para simular el proceso productivo con las posibles mejoras. |

In principle, the research problem was to identify the variables that are involved in the proliferation of low productivity in the organization, all in order to design strategies that will help Lactiquesos SAS: In the first instance recognize foci of low productivity, followed by a development of improvements through the use of Lean tools and finally evaluate these improvements as feedback. The work methodology is correlational. Making (1) a diagnosis by means of a modal analysis of faults and effects, in addition to the (2) application of a Lean diagnosis, followed (3) by the use of the 5's tool, and with these diagnoses to obtain the current state of the company, (4) design possible strategies for the improvement of the production process, generating path and process flow diagrams, in addition to proposing Poka Yokes and visual control through Andon, determining the value flow through VSM and proposing rapid tool change SMED, all this with the (5) purpose of reducing demand dissatisfaction, increasing the amount of money received annually by involving all staff in the productivity improvement project.
