Following that, the main objective of this study is to determine the influence of biological pretreatment with Pleurotus ostreatus in the alcoholic fermentation of mango residues, to evaluate the production of reducing sugars, the enzyme activity of the enzymes Laccase, Exopolygalacturonase and Exoglucanase, to determine the efficiency of ethanol production and to establish the influence of the amount of the substrate on the efficiency of ethanol production from the alcoholic fermentation of mango residues. For that reason, it was made a Pleurotus ostreatus inoculum in a 5L bioreactor at 150 rpm at 25°C for 10 days, in which two levels were evaluated: 10 and 20 g of dried mango per liter and a fermentation in 1L amber bottles for 10 days with Saccharomyces bayanus yeast. The importance of the enzymatic activity of exopoligalacturonase and glucanase at the reactor scale at the established conditions was verified and no laccases activity was detected. A biomass degradation was observed in both levels, but no significant effect was detected in any of the response variables of interest.

Por ello, ha aumentado el interés por la producción de biocombustibles como el bioetanol. Por ello, el objetivo principal de este estudio es determinar la influencia del pretratamiento biológico con Pleurotus ostreatus en la fermentación alcohólica de los residuos de mango, evaluar la producción de azúcares reductores, la actividad enzimática de las enzimas Lacasa, Exopoligalacturonasa y Exoglucanasa, determinar la eficiencia de la producción de etanol y establecer la influencia de la cantidad de sustrato en la eficiencia de la producción de etanol a partir de la fermentación alcohólica de los residuos de mango. Por esta razón, se hizo un inóculo de Pleurotus ostreatus en un biorreactor de 5L a 150 rpm a 25°C por 10 días, en el cual se evaluaron dos niveles: 10 y 20 g de mango deshidratado por litro y una fermentación en botellas de 1L de color ámbar durante 10 días con levadura Saccharomyces bayanus. Se verificó la importancia de la actividad enzimática de la exopoligalacturonasa y la glucanasa a escala de reactor en las condiciones establecidas y no se detectó actividad de las lacasas.
