De acuerdo con ello se presenta como contenido de estas notas, temas relativos a: Estructura composición y calidad industrial de la carne, Conversion del musculo en carne, Conservación, Ligantes, y extendedoras y, formulación de productos, donde se escribe el procedimiento matemático que permite administrar racionalmente toda la información disponible, optimizando cada proceso de formulación |
