The fruit represents a potential as a agro industrial production line due to the pulps physical-chemical characteristics and the multiplicity of uses both fresh as processed. The present work had as objective to characterize an acid variety of carambola adapted to the Amazonian foothills conditions, through physical, chemical and physiological analyses from the setting to the commercial maturity, in function of study of fruits growth and development and to determine the appropriates parameters to indicate the harvest moment. Fruit growth has showed a single sigmoidal pattern, with three stages of growth. Size, weight, pulp percentage, pH and total soluble solids : acidity ratio increased during the development while skin percentage, flesh firmness and acidity decreased. After 74 day the color break started. The variation-behavior in the time of the physical and chemical variables was explaining with a highadjustmcnt for polynomial and exponential models, with R-square between 0,95 and 0,99. The fruit respiration intensity suggested a possible non-climacteric pattern. Total soluble solids eontent, color and firmness were adequate harvest indexes.

Existen los tipos ácidos y los dulces, dentro de los cuales se encuentra un considerable número de variedades. El fruto representa un potencial como línea de producción agroindustrial debido a las característicasfisicoquímicas de la pulpa y a la multiplicidad de usos tantofresco como procesado. El presente trabajo tuvo como objetivo caracterizar una variedad ácida de carambola adaptada a las condiciones del Piedemonte Amazónico, a través de análisis físicos, químicos y fisiológicos desde el cuajamiento hasta la madurez comercial, en función de estudiar el crecimiento y desarrollo del fruto y determinar los parámetros apropiados para indicar el momento óptimo de cosecha. El crecimiento del fruto mostró un patrón sigmoidal simple, con tres estados de crecimiento. El tamaño, peso, porcentaje de pulpa, pH y relación sólidos solubles totales: acidez total titulable incrementaron durante el desarrollo mientras el porcentaje de corteza, la firmeza y la acidez decrecieron. A partir del día 74 se iniciaron los cambios de color. La variación del comportamiento en el tiempo de las variables físicas y químicas fue explicada con un alto ajuste por modelos polinomiales y exponenciales, con R2 entre 0,95 y 0,99. La intensidad respiratoria del fruto sugirió un posible patrón No Climatérico.
