En el estudio se encuentra la estructura de la industria carnica, el conocimiento de la producción y de la comercialización de carne de ganado bovino; análisis comparativos de precios de carne de res en Bucaramanga respecto a otras capitales del país como también con sus sustitutos directos, a su vez el comportamiento del sacrificio de ganado vacuno. La investigación se basa en un análisis financiero de los costos en los que incurre un ganadero al sacrificar una res, para determinar los efectos del monopolio y saber sobre las condiciones internas y las perspectivas de los ganaderos frente al sacrificio de cabezas de ganado, en Bucaramanga. |
