The crossbreeding between them in different proportions is gaining importance each and every day. The aim of this study was to perform a comparative analysis of some carcass quality characteristics of F1 Aberdeen Angus x Brahman bulls compared to Brangus bulls (5/8 Aberdeen Angus 3/8 Brahman) sold in Medellin city. It was evaluated the carcass of 45 bulls based on the following variables: age, carcass length (CL), leg circumference (PP), degree of ossification (OC1, OC2 and OC3), fat (G1 and G2), the weight of the hot carcass (PCC), weight of the cold carcass (PCF) and total usable beef (TCA), using the parameters determined by the Institute of classification of Food Science and Technology - National University ICTA,Colombia.The carcasses of F1 A x B bulls had higher cold carcass weight, more beef, thicker backfat and greater degree of ossification as an indicator of physiological maturity compared with the carcasses of Brangus bulls (5/8 A 3/8 B). No significant differences were found in other variables. This research demonstrates the advantages conferred by hybrid vigor in F1 cattle under the conditions tested.

La raza Angus es una raza muy reconocida por su eficiencia productiva y calidad del producto final mientras que la raza Brahman es reconocida por su habilidad para producir carne en condiciones tropicales gracias a su adaptación. Sus cruzamientos en diferentes proporciones son motivo de interés. El objetivo de este trabajo fue realizar un análisis comparativo de algunas características de calidad de canales de toretes F1 Aberdeen Angus x Brahman respecto a canales de toretes Brangus (5/8 Aberdeen Angus 3/8 Brahman), comercializadas en la ciudad de Medellín. Se evaluó la canal de 45 toretes con base en las siguientes variables: edad, longitud de canal (LC), perímetro de pierna (PP), grados de osificación (OC1, OC2 y OC3), grasa dorsal (G1 y G2), el peso de la canal en caliente (PCC), peso de la canal en frío (PCF) y el total de carne aprovechable (TCA); utilizando los parámetros determinados por la clasificación del Instituto de Ciencia y Tecnología de Alimentos – ICTA de la Universidad Nacional de Colombia.Los animales F1 A x B obtuvieron un mayor peso de la canal fría, mayor cantidad decarne aprovechable total, mayor espesor de la grasa dorsal, y mayor grado de osificación como indicador de madurez fisiológica comparados con los animales Brangus (5/8 A 3/8 B). No se encontraron diferencias significativas (P>0.05) en las demás variables.
