In order to determine the fat concentration in each one of the samples and evaluation of tenderness a Warner Bratzler texturometer was used. The collected data were analyzed through a multiple linear regression model. The analysis of the results indicates that in the bovine cattle, the differences of terneza by increase of fat deposition are also are carried out to superior ages, although the relation is inverse. The percentage of fat including within each muscular piece is directly related to greater tenderness. Minors sacrifice ages produce minors resistance to the cut.Se evaluó la diferencia de la terneza entre carnes bovinas en edades diferentes dentro de los rangos normales a las cuales son llevadas estas a sacrificio, siendo calculados sus índices de deposición grasa según el sexo debido a las diferencias halladas de dicho rasgo entre machos y hembras, de igual forma que razas taurinas e índicas. Para determinar la concentración de grasa en cada una de las muestras y evaluación de terneza se utilizó el texturometro de Warner Bratzler. Los datos obtenidos fueron analizados a través de un modelo de regresión lineal múltiple. El análisis de los resultados indica que en el ganado bovino, las diferencias de terneza por aumento de deposición de grasa también son llevadas a cabo a edades superiores, a pesar de que la relación es inversa.
