Summary:The ideal treatment using baths thermo-treated for the separation of lime of the residues when flesh is stripped from animal, of the process of tanned semi-handcrafted developed in Sampués, Sucre Department (Colombia), was analyzed. A fleshing waste representative sample, homogeneous and with less storage time was selected for its development. The sample was reduced to the size of 1 cm2 and it kept refreshed for later perform analysis of fat, pH and presence of lime. The baths thermotreated of lime-coated to three different temperatures (26, 30 and 35 ºC) were realized. The sulphuric acid as agent lime-coated in three concentrations (3, 2 and 1 N) was utilized. In addition a system of agitation simulating the bass-drum was used. Nine tests were carried out by three repetitions for major reliability of the information, where the existing correlation decided between the independent variables, temperature and concentration, on the impregnated lime and the results of fat in each of the samples in a time of 4 and 8 h. Finally the study demonstrated that it is possible to withdraw the lime and support the percentage of fat, in the residues of remove the flesh, always and when the treatment is realized by a temperature of 30 °C and using a sulphuric acid concentration of 2 ó 1 N for 4 h.
