Primero se conoce el comportamiento de este tipo de negocios dentro del sector gastronómico por medio de una encuesta que refleja el estado actual del mercado y la determinación del cliente objetivo. Luego, se hace una identificación de la normatividad vigente que se requiere en la ciudad de Pereira para la legalización de los “food truck” como modelo de negocio, este panorama cuenta con normas técnicas, legales y legislativas que se enlistan para contextualizar formalmente la iniciativa, también, se hace una identificación de la validación del modelo de negocio “food truck” en Pereira. Dentro de esta validación se tendrá en cuenta las características técnicas y administrativas donde se hace la presentación del producto y además el panorama financiero para identificar los costos, gastos, inversiones iniciales y el margen de contribución y la proyección de ingresos. Por último, se hará una hipótesis de validación para concluir si es viable o no la iniciativa.An entrepreneurial initiative validation study is developed for the start-up of a business model such as food trucks in the commercial area of Pereira. First, the behavior of this type of business within the gastronomic sector is known through a survey that reflects the current state of the market and the determination of the target customer. Then, an identification of the current regulations required in the city of Pereira for the legalization of "food trucks" as a business model is made, this panorama has technical, legal and legislative standards that are listed to formally contextualize the initiative. Also, an identification of the validation of the "food truck" business model in Pereira is made. Within this validation, the technical and administrative characteristics where the product presentation is made will be taken into account, as well as the financial panorama to identify costs, expenses, initial investments and the contribution margin and income projection.
