The metal determination was carried out by the Flame Atomic Absorption Spectrophotometry Technique (FAAS). The detection limit (LOD) and the quantification (LOQ) of the method was determined, obtaining values of 0.0309 mg/L and 0.0670 mg/L respectively. The average concentration of cadmium in the national chocolate was 4.0477 mg/kg, exceeding the limits established by the Codex Alimentarius (2,0 mg/kg) and the European Union (0,8 mg/kg).Se evaluó de forma cualitativa y cuantitativa la presencia de cadmio en un chocolate amargo con 65% de cacao producido en Colombia y en chocolates extranjeros con diferentes porcentajes de cacao. Para la preparación de las muestras se tomaron 0,5 gramos y se realizó una digestión ácida con ácido nítrico concentrado (HNO3 65%). La determinación del metal se llevó a cabo por medio de la técnica de espectrofotometría de absorción atómica de llama (FAAS). Se determinó el límite de detección (LOD) y cuantificación (LOQ) del método, obteniéndose valores de 0,0309 mg/L y 0,0670 mg/L respectivamente. La concentración promedio de cadmio en el chocolate nacional fue de 4,0477 mg/kg, superando los límites establecidos por el Codex Alimentarius (2,0 mg/kg) y la Unión Europea (0,8 mg/kg).Se avaliou de forma qualitativa e quantitativa a presença de cádmio em um chocolate amargo com 65% de cacau produzido na Colômbia e em chocolates estrangeiros com diferentes porcentagens de cacau. Para a preparação das amostras foram tomadas 0,5 gramas y se realizou uma digestão acida com acido nítrico concentrado (HNO₃ 65%). A determinação do metal foi efetuada por meio da técnica de espectrofotometria de absorção atômica de chama (FAAS). Se determinou o limite de detecção (LOD) y quantificação (LOQ) do método, obtendo valores de 0,0309 mg/L e 0,0670 mg/L respectivamente.
