Analyzes of fresh weight (0.23g - 5.7g), longitudinal diameter (9.22 mm-26.2mm) and equatorial (6.18mm-23.6 mm), humidity (70% -85%), ash (0.012%- 0.038%) were performed, pH (3.00-4.12), total soluble solids (6.2°Brix-2.2°Brix), total titratable acidity (1.7-23.9 mg of citric acid/g of fruit), fi nally classifying fi ve states of maturation. In fruits with state of maturation of consumption, the mineral content was analyzed by atomic absorption spectrophotometry. It is concluded that the fruits of S. paniculatum have potential to be exploited for human consumption in Bogotá according to the physicochemical characteristics found and the content of phenols. It is suggested to carry out phytochemical analyzes that complement a study of the bioprospecting of the fruit.

En este estudio se realiza la caracterización de las propiedades fi sicoquímicas de dichos frutos en diferentes estados de maduración, para lo cual se llevaron a cabo análisis de peso fresco (0.23g–5.7g), diámetro longitudinal (9.22mm–26.2mm) y ecuatorial (6.18mm–23.6mm), humedad (70%-85%), cenizas (0.012%-0.038%), pH (3.00–4.12), sólidos solubles totales (6.2°Brix–12.2°Brix), acidez total titulable (1.7–23.9mg de ácido cítrico/g), clasifi cando finalmente cinco estados de maduración. En frutos con estado de maduración de consumo se analizó el contenido de minerales por espectrofotometría de absorción atómica. Se concluye que los frutos de S. paniculatum son un producto que tienen potencial para ser explotado para consumo humano en Bogotá, de acuerdo con las características fisicoquímicas encontradas y el contenido de fenoles. A su vez, se sugiere realizar análisis fi toquímicos que complementen un estudio de la bioprospección del fruto.Syzyngium paniculatum árvores estão na cidade de Bogotá enfeitando ruas, parque e jardins, com brilhantes frutos conhecido como cereja magenta, que não têm qualquer vantagem. Neste estudo é realizada a caracterização das propriedades físicoquímicas dos frutos em diferentes estágios de maturação. (- 0.23 g 1255.7 g), diâmetro longitudinal (9,22 milímetros - 26,2 milímetros) e equatorial (6,18 milímetros - 6,23 milímetros), humidade (70% -85%), cinzas (0.012% - 0.038%) foram feitas análises de peso fresco, pH (3,00 - 4,12), sólidos solúveis totais (6,2 °Brix12,2°Brix), acidez titulável (1,7-23,9 mg cítrico/g de ácido de fruta), a classificação final de cinco estados de maturação. Nos frutos com estado de maturação do consumo, o conteúdo mineral foi analisado por espectrofotometria de absorção atômica. Concluiuse que os frutos de S. paniculatum têm um grande potencial para ser explorada para o consumo humano em Bogotá de acordo com as características físico-químicas encontradas e teor de fenol.
