Facultad de Arquitectura y Diseño, Pereira, 2009El trabajo realizado tuvo como objetivo desarrollar un empaque más adecuado para la conservación de la mora de castilla (rubus glaucus benth), en poscosecha, y alargar la vida útil de ésta en exhibición, solucionando los problemas mas frecuentes como: mallugaduras, derrames y hongos, producidos por la utilización de un mal empaque, mediante la utilización de ambientes controlados. Uno de los conceptos elegidos para realizar éste trabajo es la utilización de sistemas activos, ya que son técnicas destinadas a controlar los factores responsables de alteración y cambio de estado del alimento. Para extender su vida útil, mejorar sus propiedades organolépticas, seguridad alimentaria y mantener la calidad del alimento por mas tiempo. En el caso de la mora de castilla se requiere controlar la actividad hídrica después de la cosecha. El uso de dispositivos de control como: almohadillas absorbedoras de humedad, y elementos físicos integrados directamente a la lámina plástica y al diseño del empaque. Cumplen la función de separar, aislar, amortiguar, fijar y sellar, para que la fruta se conserve en mejores condiciones de almacenamiento, brindando una barrera simple a la influencia de factores tanto internos como externos, y así el empaque nos garantiza que cumple con sus funciones principales. La integración de estos sistemas activos adicionales dentro del diseño de empaque ayudan a que el producto pueda lograr extender la vida de estante y reducir las pérdidas. / Abstract: The work carried out had as objective to develop a more suitable packing for the conservation of the blackberry of Castile (rubus glaucus benth), in pos it harvests, and to extend to the utility life of this one in exhibition, solving the frequent problems as: for being compressed, spills and fungi, produced by the use of a bad packing, by the controlled environment use. One of the chosen concepts to carry out this work is the use of active systems, because they are techniques that are destined to control the factors responsible for alteration and change of state of the food. In order to extend its life utility, to improve its organoleptic properties, nourishing security and to maintain the quality of the food for more time. In the case of the blackberry of Castile it is required to control the hydric activity after the harvest. The use of control systems like: absorbent pads of humidity, and physical elements integrated directly to the plastic sheet and the packing design. They even act to separate, to isolate, to cushion, to fix and to seal, so the fruit is conserved in better conditions of storage, offering a simple barrier to the influence of factors as internal and external, and the packing guarantees us that it fulfills his main functions.
