Summary: | The main objective of this work was the generation of a proposal to improve the environmental management of the "EL NILO" farm for the production of sustainable coffee. It is considered pertinent to highlight that for an optimal evaluation an analysis was carried out for the farm from a point of view as a tourist destination, because it offers agrotourism as a specialized sector of nature tourism. In order to comply with the general purpose, the diagnosis of the current state of the environmental management of the farm was carried out and including a brief review of the coffee production process of another farm in the area. With this, an analysis of the coffee production process was achieved, through matrices of environmental aspects and impacts, in addition the sociocultural and economic ones were included, in which the use of the sectorial technical standard for tourist destination NTS-TS 001-1 was key. Finding certain environmental practices with positive impacts on the environmental, sociocultural and economic component, in the direction of achieving sustainability in the coffee agroecosystem. Although some negative aspects were identified about the subprocesses covered by the process of wet coffee benefit (PBHC), of those that have a greater degree of importance is the coffee washing, because in this three types of polluting byproducts are generated, such as the pulp, the honey waters of the wash and the mucilage. It is appropriate to highlight that, in the evaluation of the impacts identified by a double entry matrix, it was obtained that the decrease in the quality of the soil resource with possible erosion effects, being this derived from the generation of wastewater from the coffee washing presents a value of 70 equivalent to a degree of critical importance. On the other hand, was made the matrix of the ecosystem services from which the coffee agroecosystem benefits, where the functions of services with an environmental and sociocultural dimension are more important. In addition, by means of a flow diagram of the mass and energy balance it was possible to observe the inputs, processes and outputs of the agroecosystem of coffee on the farm.
