Summary:Lácteos Levelma is a company that is responsible for taking products milk derivatives where 80% of its production is focused on the manufacture of both fresh and ripened cheeses. The elaboration process of cheese generates a large quantity of whey which is a by-product with a great potential, since it has good nutritional value. This potential was the one that gave way to help different options that would allow the company to take the mayor out of the whey, which currently it is collected and sold as animal feed mainly, which leaves insignificant profits to the company. The most viable option was to produce a milk beverage from whey, and that the company had most of the resources for its preparation. For this, an experiment will be carried out with different concentrations of whey and pectin to determine the most appropriate combination for accomplishment of the goals.
