Summary: | New trends in world food consumption are oriented to the demand for products that meet health, safety and quality standards. This panorama is the product of a commercial environment that is becoming more demanding and competitive every day due to the globalization of markets and economic interdependence. This article makes a proposal for improvement in the production process of the target company in order to mitigate the risks of contamination in the area and meet the health specifications through the necessary procedures. The proposal is structured by the stages of identification of the area of improvement, detection of the main causes of the problem and definition of improvement actions. Finally, and taking into account the analysis of the results obtained during the research process, the need to improve good manufacturing practices in the production plant of the Jumbo calle 80 bakery is observed through the implementation of tools that allow the identification of good manufacturing practices and subsequent treatment, to comply with the requirements established by current regulations. |
