Introduction: This article derives from the research “Technological development of post-harvest treatment and production of fruit flours from the Monte Nativo in Santiago del Estero (pilot scale)”, which was conducted by the School of Agronomy and Agro-industries at the Universidad Nacional de Santiago del Estero during 2015. The objective of the study was to analyze the current and potential use of wood and non-wood forest products from native forests by the inhabitants of Santiago del Estero and their willingness to pay for them. Methodology: A data collection instrument was designed based on a survey that was applied to 609 real and potential consumers of products related to wild fruits and by-products such as flours, sweets and drinks. Results: The most consumed fruit is carob bean, followed by mistol, and chañar. As for by-products such as syrups and flours, carob beans also prevail. A high number of individuals stated that they would try and use products enriched with native fruits. There is willingness to pay extra for products with flours of wild fruits in 63 % of respondents. Conclusion: The inhabitants of urban areas in the province of Santiago del Estero consume non-wood forest products, especially fruits and flours derived therefrom, coming from the native forests of the province. |

Introducción: el artículo es producto de la investigación “Desarrollo tecnológico del tratamiento post recolección y la producción de harinas de frutos provenientes del Monte Nativo de Santiago del Estero (a escala piloto)”, que se realizó en la Facultad de Agronomía y Agroindustrias de la Universidad Nacional de Santiago del Estero durante el 2015. El objetivo del estudio fue analizar el consumo actual y potencial de productos forestales madereros y no madereros de bosques nativos por pobladores de la ciudad de Santiago del Estero, así como la disposición a pagar por ellos. Metodología: se diseñó un instrumento de recolección de datos basado en una encuesta que se aplicó a 609 consumidores reales y potenciales de productos relacionados a frutos del monte y productos derivados como harinas, dulces y bebidas. Resultados: el fruto más consumido es la algarroba, luego el mistol y el chañar. En cuanto a los derivados como arropes y harinas, prevalecen también los de algarroba. Hay una alta frecuencia de casos que manifiestan que probarían y consumirían productos enriquecidos con frutos nativos. Existe voluntad de pago adicional por productos con harinas de frutos del monte en un 63% de los encuestados. Conclusión: los pobladores de áreas urbanas en la provincia de Santiago del Estero consumen productos forestales no madereros, especialmente frutos y harinas derivadas de estos, provenientes de los bosques nativos de la provincia.Introdução: o artigo é produto da pesquisa “Desenvolvimento tecnológico do tratamento pós-colheita e produção de farinhas de frutos provenientes do Monte Nativo de Santiago del Estero (em escala-piloto)”, que foi realizada na Faculdade de Agronomia e Agroindústrias da Universidade Nacional de Santiago del Estero durante 2015. O objetivo do estudo foi analisar o consumo atual e potencial de produtos florestais madeireiros e não madeireiros de bosques nativos por populações da cidade de Santiago del Estero, assim como a disposição a pagar por eles. Metodologia: foi criado um instrumento de coleta de dados baseado em um questionário realizado com 609 consumidores reais e potenciais de produtos relacionados a frutos do monte e produtos derivados, como farinhas, doces e bebidas. Resultados: os o fruto mais consumido é a alfarroba, seguida do mistol e do chañar. Entre os derivados, como os xaropes e farinhas, também prevalecem os de alfarroba. Há uma alta frequência de casos que manifestam que provariam e consumiriam produtos enriquecidos com frutos nativos. Existe intenção de pagamento adicional por produtos com farinhas de frutos do monte entre 63% dos entrevistados.
